A traditionally “wet” processed or washed coffee as opposed to the sundried Ethiopian Harar. The difference results in a much brighter coffee with less earthy and rustic flavors then the neighboring Harar region. A light/medium roast profile produces a somewhat sweet yet well balanced brew with bright acidity, floral and citrus flavors as well as subtle strawberry, cherry, & vanilla notes. Yirgacheffe can be summed up as an intense coffee full of flavor with bright acidity. When cupping, one will notice a very pronounced dry fragrance as well as wet aroma.
